2020 Pét Nat

Pét Nat, or Pétillant Naturel, is an ancient method of making sparkling wine. This naturally bubbly wine is made from The Roost’s own Siegerrebe, an aromatic German varietal that’s quick ripening and fairly cold-tolerant.
Expect this year’s Pét Nat to be floral and fresh with a hint of biscuit from the lees. On the nose you’ll find muscat, lemon, grapefruit, orange, and hawthorn flowers.
What makes this wine extra special is that it’s a near-perfect example of natural winemaking: using a wild ferment there are almost no sulphites or intervention in the cellar.
We recommend serving this cold and alone — that is, without food, not necessarily without friends.
Like all the small batch series, this wine is unfiltered and hand-bottled in such small quantities that we hand-write every label.
