2019 Pét Nat
Pétillant Natural, or Pét Nat, is an ancient method of making sparkling wine. With nearly no intervention during the winemaking process and incredibly low levels of sulphites, this wine is as natural as we can get it.
Our winemaker is a big fan of this bubbly natural wine and she's thrilled to finally have one at The Roost. Georgian Bay Chardonnay from Four Wheel Farm near Creemore is the perfect fruit for our VQA Pet Nat, which is the first instalment in our Terroir series of wines. Expect it to be crisp, fruity and incredibly fresh with a hint of biscuit from the lees (yeast) still in the bottle.
This wine was hand-bottled and hand-labelled by the winemaker. It was bottled with its lees at a precise moment in the fermentation process thereby creating just the right amount of fizz - only 50 cases of this special wine are available.
Serve chilled. Can be enjoyed cloudy or clear - leave in the fridge for a few days, handle and pour carefully if you'd like to try clear.
